Pickled Jalapeno Peppers
Wash peppers, pack tightly in jar. Heat to boiling.
- 1 cup vinegar
- ¼ cup water
- 1/8 cup olive oil
- 1 teaspoon salt
- 1 teaspoon pickling spices
Pour over peppers to within 1 inch of top jar. Put on cap and process 10 minutes in boiling water bath.
Grandmother’s Best Bean Soup

3-4 cups bean mix – soak overnight. Use warm water – makes beans more tender
Drain and add 2 quarts water, ham hock or smoked sausage drained. Simmer 3 hours. Add 1 large onion, chopped. 1 large can tomatoes, one red pepper or teaspoon chili powder. Juice of 1 lemon, 1 clove garlic minced. Salt and pepper to taste. Add potatoes, celery and carrots. Simmer an hour or more. I add 1 teaspoon liquid smoke awhile before serving. Good next day also.
